The U.S. is getting hit hard this winter with cold, bone-chilling weather and a nasty flu season. My home remedy? Good ol’ chicken noodle soup. It warms the body and soothes what ails you!
Can’t you just taste it?!
I wish I could tell you that I came up with this recipe myself…that I’m an absolute whiz at creating recipes from my own brain. Although I can finesse and doctor something up mighty good, coming up with them from nothing only happens once in a blue moon and this one isn’t it!
But, like good friends who pass tried and true recipes back and forth, that’s what I’m doing today — passing along a family favorite that is sure to fix you right up this winter season: “The Lady’s Chicken Noodle Soup.” I swear, you’re going love it!
Here’s where I’ve changed mine up:
I skip the cooking sherry and the parmesan cheese (sometimes I add them and sometimes I don’t — just depends on what I have on hand and if I’m trying to cut fat and calories.)
I also skip the heavy cream. I put in a dash of one percent milk — and by a dash I mean about 1-2 tablespoons. You really could skip this all together as well.
I also use fresh parsley instead of rosemary and I add about 1/2 cup extra noodles because my kids love them.
It’s a very simple recipe and it is oh-so-delicious! Good comfort food that is a winter family favorite around here.
