Mini Spinach Tarts

 I love spinach quiche.  When my grandson was first getting to eat real people food…I used to buy these amazing mini spinach tarts for him.  Our whole family loved them..but he especially did.  They were his absolute fave!  I wish I could say he would still eat them, but I don’t think he will.  Where do kids come up with hating spinach?  No one told him it was bad…but anything green…you have to force feed to him.  Not me though…I LOVE me some veggies.  If it weren’t for the fact…that I REALLY like meat too…I could totally be a vegetarian.  But…steaks are pretty darn good.

I found this recipe…and I sure hope Y’all like them as much as we do.

Mini Spinach Tarts

So…I have a confession to make.  The day I made these…I didn’t have any frozen spinach…I didn’t even have any canned spinach…so I used mustard greens instead…YUMMO!!! 

Ingredients:

2 eggs, beaten

1/2 Cup milk

1/4 tsp hot pepper sauce

1 Pkg frozen spinach, thawed and squeezed

1 1/2 Cups Italian blend shredded cheddar cheese

3 Tbsp finely chopped roasted red peppers and or real bacon bits

1 Pkg pastry shells.

Just in case you’ve never seen these pastry shells before…

I’m sure that this isn’t the only brand on the market…but I found these in the frozen dessert section at my grocery store.

I also didn’t have any real bacon bits…you know the kind you sprinkle on your salad…so I baked some bacon while I made these.  Have you ever made bacon in the oven?

I had to preheat the oven for the tarts…so I threw some bacon in… 350 for about twenty min.  It’s awesome…not popping all over you…and you don’t have to tend it.  You can just stick it in the oven…and go on about your rat killin’.  I always line a baking sheet with tin foil…and cook it on that though…it makes clean up..WAY easier.

Instructions:

Preheat oven to 350 F.  

Beat eggs, milk and pepper sauce in a medium bowl.

Stir in spinach, cheese and red peppers/bacon.

Pour evenly into  pastry shells; place on a lined baking sheet.

Bake for 30-35 minutes, or until centers are set.

I’ve not served these to Mr. yet…maybe he’ll change his mind about spinach after these.

I’m wondering…and I wish I had tried…putting cream cheese in them…..Oh Lawdy…I’d probably eat every one of them before they ever made it to the table.  I did sprinkle more of the hot pepper sauce on mine before I ate it…and I loved it.  if you didn’t want that…you could use a mild hot sauce or even…and I can’t believe about to say this….Ketchup… Please don’t do that! lol
