Sweet Potato-Apple Soup
This is the time of year when I start making foods that are a little heavier ~ it’s something about the way I nest ~ fall = hearty in my mind. I have a thing for sweet potatoes {they are full of nutrients} and apples which are especially delicious right now. Combine the two and a few other ingredients and you have a nice, rich and hearty soup that can stand alone as a meal or serve as the first course of a larger multi-course meal.
Ingredients
- 1 tablespoon olive oil
- 1 cup diced onion
- 2 cloves garlic, chopped
- 1 1/2 lbs sweet potatoes, peeled and cut into 2-inch chunks
- 1 pound Idaho potatoes, peeled and cut into 2-inch chunks
- 2 Gala apples, peeled, cored and cut into 2-inch chunks
- 2 cups chicken broth
- 1 cup water
- 1/4 cup maple syrup {plus more for drizzling}
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Heat oil in a large, lidded pot over medium heat.
- Add onion, cook 4 minutes.
- Add garlic, cook 1 minute.
- Stir in sweet potatoes, Idaho potatoes, apples, chicken broth and 1 cup water.
- Cover and bring to a simmer.
- Cook 20 minutes.
- Blend in blender in small batches until smooth.
- Return to heat.
- Stir in maple syrup, salt and pepper.
- Drizzle with maple syrup before serving.

My family really liked this and even commented that it filled them up ~ which having a family of all boys means a lot ~ NOTHING ever fills them ~they are bottomless pits at times.
