Heaven forbid I make something without chocolate added somewhere in the recipe! ๐ I really do love chocolate a bit too much.
Last week I made a Chicken Rice Vegetable Soup recipe {I’ll be sharing that recipe at Cupcakes and Crinoline in a few days}. One of the ingredients called for was zucchini. When I went to buy the one little zucchini there was a package of three available in a pack so I went ahead and splurged {think Gucci Veggies} on the three-pack. After I made the soup I had two zucchinis left so I made a loaf of Chocolate Chip Zucchini Bread and a loaf of Harvest Zucchini Bread. I love when I can stretch out an ingredient and use it in so many different ways.


- 1 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons butter, softened
- 3/8 cup granulated sugar
- 3/8 cup packed brown sugar
- 2 large eggs
- 3/8 cup vegetable oil
- 1/2 teaspoon vanilla extract
- 1 large zucchini, shredded
- 1 cup Semi Sweet Chocolate Chips
- Preheat oven to 350 degrees. Grease and flour one 8 x 4 inch loaf pan.
- Combine the flour, baking soda and salt in a medium bowl. Beat butter, granulated sugar, and brown sugar in a larger mixer bowl until well combined. Add eggs one at a time, beating well after each addition. Beat in oil and vanilla extract. Stir in flour mixture just until moistened. Fold in zucchini and morsels. Place in pan.
- Bake for 60 to 70 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack for 10 minutes. Run knife around edge of pans and remove. Allow to cool completely on wire rack before slicing.

I love a good loaf of quick bread ~ my family gobbled this up for dessert after dinner the night I made it and then for breakfast the next morning ~ there’s zucchini in it so I think that qualifies it as healthy!

One thing…3/8 Cup is a measurement that is totally foreign to me. Do you actually have a cup with those measurements or do you measure our 1/4 cup and 1/8 cup for the total? I hope I don’t sound really silly for this question. ๐

Hi Diane! I use the 1/8 cup (and I do have a measuring cup with that marking) 3 times. I usually double this recipe so maybe I should have stated that in which case it would be 3/4 cup for 2 loaves (does that make sense???). Thanks so much for stopping by.
