Make Ahead Meal ~ Freezer Burritos

Can you believe that school will be starting again soon?  It’s time to start thinking about ways to serve healthy homemade meals but to do it quickly.  I like to make and have these burritos on hand for when we’re on the go.  

A while ago I came across a great recipe on pinterest from shutterbean.  I am so glad I saved it and made it.  These Make Ahead Freezer Burritos are excellent!  They’re not only good to keep on hand for your own family but if you know someone that needs to have some ready made meals this would be a wonderful addition to their freezer.

I deviated a bit from Shutterbean’s recipe substituting a box of Spanish Rice for the homemade rice and since I didn’t have any refried beans in the pantry I omitted those but that’s the beauty of this recipe.  You can make it your own by using ground beef, chicken, leftover roast, pork, shrimp….whatever you want.

Ingredients
  1. 2 pounds of ground beef
  2. 1 packet of taco seasoning
  3. 1 box of Spanish Rice {follow directions on box}
  4. Large flour tortillas
  5. Optional: Refried beans, olives, etc.
Instructions
  1. Brown ground beef and drain.
  2. Add taco seasoning mix and water following directions on the packet.
  3. Make Spanish Rice according to the directions on the box.
Once the rice and meat are ready proceed to the next step
  1. Using a tortilla steamer or Shutterbean's method {take a dish cloth and run under water to moisten, wring out and lay on counter. Place tortillas in the towel, loosely wrap and microwave for 1 minute so the tortillas are easier to work with.}
Begin assembling tortillas
  1. Place your rice, meat, cheese and anything else you wish to add to the burritos on your tortilla.
  2. Fold your tortillas.
  3. Wrap in aluminum foil.
  4. Place in freezer or place in a ziplock bag or other freezer container including directions for reheating.
Reheat
  1. Unwrap frozen burrito from foil.
  2. Wrap burrito in a damp paper towel.
  3. Microwave for 3 minutes on high.
  4. Wait to cool, add desired toppings, eat!
