Make Your Own Mallow Cups

Make Your Own Mallow Cups

When I was growing up Mallo Cups were one of my favorite treats.  They were creamy, chocolatey and sticky.  The perfect combination.  I never dreamed that you could actually make your own but you can and this recipe is super easy.  These would be great to make for Valentine’s Day!

  1. 1 cup semi-sweet chocolate chips
  2. 1/2 cup coffee creamer French Vanilla or flavor of your choice
  3. 24 large marshmallows
  4. 1/8 teaspoon salt
  5. 1 teaspoon vanilla
  6. 6 drop of red food coloring {I added this for Valentine's Day but you could add the color of your choice or forgo the food coloring}
  7. 1 cup of whipping cream
  8. Candy for garnish
  1. In 1-quart saucepan melt chocolate chips over low heat stirring occasionally until chips are melted.
  2. Place 8 paper liners in a muffin pain.
  3. With pastry brush coat inside of each liner evenly with melted chocolate almost to the top of the liner but not over the edge.
  4. Refrigerate until firm, approximately 30 minutes.
  5. Meanwhile, in a 2-quart saucepan combine coffee creamer and marshmallows cooking over very low heat and stirring occasionally until the marshmallows are fully melted and incorporated with the creamer.
  6. Remove from heat and stir in salt, vanilla and red food coloring.
  7. Refrigerate until mixture mounds slightly when dropped from a spoon (about 1 hour).
  8. Chill your mixing bowl and beaters {I place mine in the freezer for about 30 minutes before whipping cream}. Remove from freezer and beat chilled whipping cream at high speed scraping your bowl often until stiff peaks form.
  9. Stir marshmallow mixture until smooth and fluffy and then gently fold into the whipped cream.
  10. Fill chocolate cups with about 1/3 cup of the mixture.
  11. Refrigerate at least 2 hours.
  12. When ready to serve carefully {you need to do this slowly} remove the liner from the chocolate cup so that you don't crack it.
  13. Garnish with candy of your choice.

You can use mini cupcake liners for smaller mallow cups but I made the big ones to share ~ okay…I should have shared mine but I didn’t.  I savored every last bite and even had it with some milk {I was in heaven!}.
