Super Food Salad

Super Food Salad

A healthy, tasty salad doesn’t have to be fancy with a ton of ingredients. I like to choose a few salad items that pack a powerful punch of health and nutrition … this is why I never make a salad using iceberg lettuce. Iceberg lettuce provides less in the way of nutritional value compared to other leafy greens. So if I’m going to eat salad, I want it to give me as much nutrition as possible.

Super Food Salad via Town and Country LivingThis Super Food Salad contains brussel sprouts, spinach, arugula, and walnuts.

Brussel Sprout, Spinach, and Arugula SaladThe brussel sprouts are raw and thinly sliced. They provide a delightful crunch to the salad.

Simply add the spinach, arugula, walnuts, and you’re good to go!

Super Food Salad via Town and Country LivingI like to include nuts in a salad because they add protein and the good kind of fat. You want a little bit of fat when eating a salad because fat helps your body absorb the vitamins and minerals. That’s why I don’t use fat free dressings.

Salad with spinach, brussel sprouts, arugula, and walnutsThis super food salad would be even better served with Mimi’s Salad Dressing!

Today I’m also sharing an especially yummy recipe for One Pan Linguine on my own blog.

You don’t want to miss it! It’s so easy to make and so very tasty!
