Sweet and Sour Cucumber Salad

Sweet and Sour Cucumber Salad

Sweet and Sour Cucumber Salad ~ this was one of my favorite summertime salads when I was growing up.  My mom was a great cook ~ most of her recipes were simple…nothing too complicated….but always delicious and even though I have her exact recipe for this salad, mine never tastes as good as my Mom’s ~ she just had a way about her!

Mom’s Creamy Sweet & Sour Cucumber Salad

1 Large fresh cucumber

1 small red or white onion sliced thin

4 ounces sour cream {save fat & calories by substituting fat-free or low fat}

2 tsp. vinegar

3 tsp. sugar

Milk to desired consistency {whole milk will provide a creamier consistency while skim milk will be more “liquidy”}

1.  Peel the cucumber and cut into thin slices.  Salt the slices and squeeze gently {it is important to squeeze the cucumbers once sliced and salted to remove the extra liquid so that the salad is not watery and I usually let them sit in a strainer in a bowl in the refrigerator for about an hour to allow any extra juice to drain.

2.  Combine sour cream, sugar, vinegar and milk blending well.

3.  Add cucumbers and onion to cream sauce.

4.  Cover and chill for at least 3 hours prior to serving.

When I saw this bowl {ombre before ombre was popular!} I knew what we were having ~ I now have that bowl and when my family sees it, they know that my Mom’s Sweet & Sour Cucumber Salad is on the menu.

I hope you enjoy this simple summer salad from my Mom!
